Coffee is harvested by hand by strip picking or selective picking. Strip picking is exactly how it sounds, trees are harvested entirely at one time "stripping" all the beans off the branches, ripe as well as unripe cherries. Typically, only Robusta coffee is strip picked.
Sun drying produces a better quality of the coffee. The drying operation is a very important part. It allows producing the better quality of the green coffee.
Keep the coffee plantaion free from weeds.This helps to ease harvesting of coffee fruits.
It's important to dry the coffee to less than 11% moisture content and, in order to do this, good heat is required.
